Introduction

The increasing demand for sustainable and eco-friendly products has led to a growing interest in the utilization of shrimp skin waste as a raw material for the production of carboxymethyl chitosan (KMK). KMK is a derivative of chitosan, a biopolymer obtained from the shells of crustaceans, which has numerous applications in the fields of pharmacy, biotechnology, and food. However, the quality of KMK is strongly influenced by the conditions of the eternification process, including temperature and reaction time. This study aims to evaluate the effect of emergency temperature on the quality of KMK produced from shrimp skin (Penaeus Monodon).

Materials and Methods

In this experiment, eternification was carried out at various temperatures, namely 60 °C, 75 °C, and 90 °C, with a ratio between chitosan and monoclyracetic acid of 1:0.9 (weight per weight). The whole eternification process lasted for 4 hours. The quality of the resulting KMK was evaluated in terms of solubility, water content, and ash content.

The results of the study showed that the temperature of eternification had a significant impact on the quality of the carboxymethyl chitosan produced. At 90 °C eternification temperatures, research shows that the resulting KMK has a water content of 7.585% and ash content of 62.63%. This shows that the KMK produced at that temperature has better quality compared to lower temperatures. Low water content can increase product stability, while high ash content indicates a better level of purity, so that it can be more effective for advanced applications.

The higher eternification temperature turns out to improve the quality of chitosan carboxymethyl, especially in terms of solubility.
